So leaning into local sourcing, aimed at local diners, is a quietly contrarian move. I think it's also the smarter one. Here's the tension.
Tourists Pay Now. Locals Pay Forever.
A tourist is one great check and a goodbye. They'll never come back, never bring friends, never carry you through the off-season. The resort model optimizes for that one transaction.
Locals are the opposite trade. Lower urgency, more skepticism, harder to win — but if you win them, they become regulars, off-season covers, and the people who bring their out-of-town guests back to you. Betting on locals is slower money. It's also stickier money.
"Support Local" Is a Strategy, Not a Slogan
The local-sourcing angle isn't just feel-good. A menu built on regional seafood and produce keeps spend inside the Bay's supply chain and gives residents a reason to care that a generic resort menu never earns.
That's the part a tourist-only spot can't copy. You can't fake "this is ours." A kitchen that genuinely sources local has a story residents want to tell — and residents telling your story is worth more than any in-room ad targeting guests who are leaving Sunday.
